Camping Recipe: Beef Stew

It may not be the easiest camping recipe or the quickest, but there’s something about a delicious bowl of beef stew after a long day of hiking the trails or enjoying the chilly weather that cannot be beaten. Get this must-have beef stew recipe below and take your campground menu to the next level this year. You’ll love how filling and comforting this dinner is for everyone.

2 lbs cubed beef stew meat
3 tbsp vegetable oil
4 cubes beef bouillon, crumbled
4 c. of water
1 tsp dried rosemary
1 tsp dried parsley
1/2 tsp ground black pepper
3 large potatoes, peeled and cubed
4 carrots, cut into 1-inch pieces
4 stalks celery, cut into 1-inch pieces
1 large onion, chopped
2 tsp cornstarch
2 tsp cold water
You’ll also need a Dutch oven.
Heat a drizzle of oil to your pot or Dutch oven and cook the beef until browned, being sure to cook on all sides evenly and work in batches to not overcrowd the pot. Remove from the pot and set aside.
Using hot water and a separate bowl, combine the beef bouillon and water until dissolved and add to the Dutch oven.
Return beef to the pot with the broth from the previous step, rosemary, parsley, and pepper.
Bring to a boil and allow to simmer, covering with a lid for an hour. Check on it occasionally to ensure it’s not sticking to the sides.
Wash and dry all produce.
Peel and cube potatoes, peel and cut carrots into 1″ pieces, cut celery into 1″ pieces, and chop the onion.
In a small bowl, combine the cornstarch and 2 tsp cold water, mixing until smooth.
After the meat has cooked for 1 hour add the veggies and the cornstarch mixture, stirring to combine.
Cover and cook for another hour, stirring occasionally to ensure even cooking.
Serve with a large slice of bread.
