Camping Recipe: Easy Steak Fajitas

This camping recipe is perfect for making around the campfire. Take the flavors you love to the campground with ease and make these easy steak fajitas right over your campfire on your next camping trip.

Ingredients

  • 1 pound flank steak
  • 3 tbsp olive oil divided
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp smoked paprika
  • 3 bell peppers of your choice (green, yellow, or orange)
  • 1 small yellow onion
  • Salt and pepper
  • small flour or corn tortillas
  • 1-1/2 cups of dry minute rice

Toppings:

salsa, sour cream, avocado slices or guacamole, fresh cilantro, and lime wedges.

Instructions

  1. Start by washing and drying all of your produce.
  2. Slice the bell peppers and red onion thinly.
  3. Slice your steak against the grain and set aside.
  4. Next, in a medium bowl, add cumin, chili powder, salt, garlic powder, onion powder, and paprika. Stir until thoroughly combined.
  5. Dump in the strip steak and 2 tbsps of olive oil, and stir until the steak is thoroughly coated.
  6. In a second bowl, combine the bell peppers, onion, and a tbsp of olive oil. Salt and pepper to taste and then stir to coat.
  7. Next, you will make your foil packets by cutting 8 20” pieces of aluminum foil. Double-layer the foil, so you have four packets with two layers of aluminum foil each.
  8. If you have decided to use rice with your fajitas, add 1/4 cup of dry instant rice to the center of each of the four packets.
  9. Then divide the steak between the four packets, placing it directly on the rice.
  10. Next, add the peppers and onions to each packet surrounding the steak and rice.
  11. Fold up all of the edges over the ingredients and fold the edges over each other so that they are completely sealed.
  12. Next, you’re going to make packets for the tortillas, so just cut out more foil squares that are large enough to fit 5 to 6 tortillas each and fold up the edges to seal like the other packets.
  13. When you’re ready to start cooking, preheat your oven to 425°F or build a strong fire. Place the fajita packets on a baking sheet and add them to the preheated oven or place them directly over the fire.
  14. If baking, cook for 17 to 18 minutes until the meat is cooked through if you’re cooking over your fire, make sure you’re using coals and cook for four minutes per side, flipping after every four minutes until the meat reaches 145 internal temperature.
  15. Warm the tortillas by either placing them in the oven for the last 10 minutes of the foil packet dinner cooking or adding the tortilla packets directly to the grill rack until warmed through.
  16. Serve with salsa, sour cream, plenty of avocado, guacamole, fresh cilantro, and lime wedges.
